Recipe of the Weekend: Easy and Healthy Muffins

Vegetables are full of vitamins necessary for our bodies to perform optimally. Richer colors – richer goodness! Paint your morning and try this recipe – it’s wonderful!

First you will need olive 0il spray (Pure olive oil). Then, you can add anything you want, like vegetables, meat, cheese, avocado and even whole grain bread cubes if you need carbohydrates.
Chop all the ingredients and fill muffin cups about 1/2 full.
Whisk: 14 egg whites and 4 whole eggs and a dash of sea salt and black pepper.

Directions:
1. Preheat oven to 375 degrees. Coat 12 muffin tin with a small amount of olive oil spray to prevent sticking.
2. Combine vegetables in large bowl. Fill each muffin tin 2/3 full of your ingredients
3. Use third measuring cup egg mixture and pour slowly into each muffin tin. Egg mixture should fill the tin rest of the way. Bake about 30 minutes or until the muffins have risen and are slightly browned. Serve.

They are wonderful easy to take, ready to eat breakfast or snack idea for you and your children!
